Our chestnuts are of the highest quality and they come from Roccamonfina, Conca della Campania (two cities located on the crater of an ancient inactive volcano: a pristine territory rich in lush chestnut forests) and from Serino. These places are situated in Campania state, South of Italy, where the chestnut cultivation is a typical activity of the territory and the farmers still follow traditional methods, often disappeared elsewhere.

Our chestnuts are of the highest quality and they come from Roccamonfina, Conca della Campania (two cities located on the crater of an ancient inactive volcano: a pristine territory rich in lush chestnut forests) and from Serino. These places are situated in Campania state, South of Italy, where the chestnut cultivation is a typical activity of the territory and the farmers still follow traditional methods, often disappeared elsewhere.

Don’t be afraid to buy too much chestnuts! Our products are fresh and of the highest quality and they last for many days. Furthermore, if you want, there are several methods to preserve chestnuts for even longer.

How to store chestnuts

Chestnuts can be preserved both raw and cooked and there are different methods to do this.

The oldest are:

  1. Put them under the sand: just get some clean sand or sawdust, and alternate in a container a layer of chestnuts and one of sand and can last a few months without undergoing variations.
  2. The second method is the so-called “novena method”: for 9 days the chestnuts are placed in water at room temperature. We must eliminate the chestnuts that come to the surface in the first two or three days; the chestnuts will therefore remain immersed until the ninth day, developing micro-organisms which, triggering what we can call a “light fermentation”, will allow a long-lasting conservation. Every day must be changed half of the water available for chestnuts and in the middle of the path it is good to change it all. At the end of these days of immersion, the chestnuts are left to dry, now ready to be kept for up to three months.

Now let’s see more modern methods for preservation.

  • Freeze and store the roasted chestnuts

    If roasted chestnuts are left, you can store them by freezing them. After having engrave them, roast the chestnuts following the recipe, then let them cool to room temperature and pour them into the bags to freeze and then put them in the freezer.

  • Freeze and store raw chestnuts

    Another method for storing them for several months is to freeze fresh raw chestnuts. With this method you can keep the chestnuts for about 5-6 months. Before proceeding to freezing, carefully clean the chestnuts and select them by removing the buggy ones. With a knife, slightly touch the outer skin, pour into the bags to freeze and then put it in the freezer.

  • Store chestnuts in the fridge

    If you mean to consume pretty soon the chestnuts you can put them raw in the fridge, so they will last for about 1 month. Always pay attention to discard the buggy ones: carefully clean the chestnuts removing all the impurities and then soak them in water for about 4-5 days. Let them dry well for about 48 hours and then store them in the fridge.
